Ahhh this recipe is soooo much fun! I love it, who doesn’t love unicorns?! 😀

Important Note: If you want to make this fabulous recipe, you’ll need to soak the cashews for four hours, so make sure you do that the night before!

Ingredients

  • 1 cups raw cashews
  • 3 cups water
  • 1 vanilla bean, insides scraped out
  • 60ml of ginger juice
  • 60ml lemon juice
  • 1 tablespoon spirulina extract
  • 1 tablespoon maca root
  • 2 medjool dates
  • Turmeric, spirulina powder, and organic sprinkles to garnish (optional)

You Won't Believe These Chili Cheese Nachos Are Actually Meat- And Dairy-Free Hero Image

Loaded Nachos are the best, these are even better 😉

Serves 8 to 10

Ingredients (Sauce)

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 large cloves garlic, minced
  • ½ to ¾ teaspoon sea salt, to taste
  • 1 medium jalapeño, seeded and finely chopped
  • 1 small red capsicum, diced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 400g can diced tomatoes, with juices
  • 1 tablespoon tomato paste
  • 1 400g can lentils, drained and rinsed
  • 1 400g can red kidney beans, drained and rinsed
  • 1½ teaspoons apple cider vinegar
  • freshly ground black pepper
  • Cheese Sauce (see below)
  • Corn tortilla chips, for serving

It’s creamy, rich, and just a touch sweet. It’s wonderful warm (it steams quite well, though it doesn’t get frothy), refreshing and delicious cold; it’s an all-around keeper.

Important Note: If you want to make this fabulous recipe, you’ll need to soak the cashews for at least 5 hours, so make sure you do that the night before!

Makes 3½ cups

Ingredients

  • 1 heaping cup cashews
  • 3 small dates
  • 1-inch length of vanilla bean
  • a good pinch of sea salt
  • a big pinch of cinnamon
  • 3 cups filtered water

This salad is the best of both worlds; it rocks the taste buds and is extremely good for you!

Ingredients (Salad)

  • 1 buttercup pumpkin, seeds removed and sliced
  • 2 tablespoons olive oil
  • 1/4 teaspoon freshly grated nutmeg
  • salt and pepper
  • 1 head of kale, stems removed and leaves shredded
  • 1/2 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 3 slices bread (I use my home made herb bread, but any type will do), torn into pieces
  • 1/4 teaspoon garlic powder (if you’re using fresh make sure it’s finely diced or minced I’d use about half a clove)
  • 2/3 cup whole honey roasted cashews (you can use regular if you prefer)
  • 1 cup cherry tomatoes, halved
  • 6 ounces fetta cheese, crumbled

Ingredients (Maple Dressing)

  • 2 teaspoons dijon mustard
  • 2 garlic cloves, minced
  • 2 teaspoons apple cider vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup maple syrup
  • 1/2 cup olive oil (extra virgin is best)

  • 2 cups raw cashews
  • 3¼ cups water, divided
  • ¼ cup dijon mustard
  • ¼ cup  yeast
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon garlic, minced
  • ½ teaspoon sea salt
  • pepper to taste

Cacao powder and coconut oil work wonders in this simple-but-crowd-pleasing dessert that everyone can enjoy.

Serves 6

Ingredients (Crust)

  • 1/4 cup raw almonds
  • 1/4 cup raw cashews
  • 1/4 cup cacao nibs
  • 2 tablespoons date paste
  • 2 tablespoons coconut oil
  • 1 pinch of salt

Ingredients (Filling)

  • 7 tablespoons cacao powder
  • 7 tablespoons agave syrup
  • 6 tablespoons coconut oil
  • 1 pinch of salt
