Bone Broth Borscht

A Detoxing Bone Broth & Beet Winter Soup Hero Image

Beets contain betaine and other antioxidants that help cleanse and purify the liver and gallbladder (two of our major detoxing organs).

Ingredients

  • 1 to 2 litres of beef bone broth
  • 3 medium beets, peeled and chopped into cubes
  • 1 onion, diced
  • 4 stalks celery, chopped
  • 1 fennel bulb, thinly sliced
  • 3 carrots, chopped
  • 5 garlic cloves, minced
  • 2 tablespoons olive oil
  • ¼ lemon, for juice
  • sea salt
  • fresh black pepper

Directions

  1. In a medium pan, heat 1 tablespoon olive oil until warm but not hot. Add the onion, celery, fennel, carrots, salt, and pepper and saute for about 2 to 3 minutes.
  2. Add the garlic and stir for another 1 to 2 minutes or until translucent.
  3. Transfer the vegetable to a large saucepan. Add the bone broth, beets, and a touch more salt and pepper, simmer for 1 to 1½ hours on the stovetop.
  4. Once all vegetables are tender, add the juice of ¼ lemon and the remaining tablespoon of olive oil. These ingredients help to build the texture and the flavor (you may find adding a little more lemon, oil, or salt will help bring out the flavors, but make sure you keep tasting!).
