Wild Rice and Spinach Soup

Nothing warms the heart (and body) like a nice, good-for-you soup!

Serves 4

Ingredients

  • 3 cups water
  • 1 cup wild rice, uncooked (brown rice is an excellent substitute if you can’t get wild rice)
  • 1 teaspoon olive oil
  • 1 cup onion, chopped
  • 2 garlic cloves, crushed
  • 2 carrots, coarsely chopped
  • 1 celery stalk, chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1.2L reduced-sodium chicken broth
  • 1 400g can diced tomatoes
  • 3 cups spinach, torn
  • 2 mushrooms, thinly sliced (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Preparation

1. Cook rice according to package directions.

2. In a Dutch oven, heat oil over medium heat. Add onions and garlic, and sauté for 1 minute, or until onions are translucent. Add 3 cups water, carrots, celery, basil, oregano, chicken broth and diced tomato.

3. Bring to boil, reduce heat and simmer 20-30 minutes.

4. Add cooked rice, spinach, salt and pepper, and simmer for additional three minutes.
