Bliss Salad with Ginger Miso Dressing

Tasty healthy salad that you’ll never get sick of 😉

Serves 1-2

Ingredients (Bliss Salad)

  • 1 handful fresh rocket
  • 1 handful fresh spinach
  • 1 handful shredded kale
  • ½ cup thinly sliced beets (raw or roasted)
  • ½ cup shredded carrots
  • ¼ cup thinly sliced red onion
  • ¼ cup cooked quinoa
  • ¼ cup cooked lentils
  • 1 tbsp dried cranberries
  • 1 tbsp goji berries
  • 1 tbsp hemp seeds
  • 1 tbsp walnuts

Ingredients (Ginger Miso Dressing)

  • 1/4 cup extra virgin olive oil
  • 1/4 cup water
  • 1/4 cup white miso paste
  • dash of honey
  • 2 tbsp chopped spring onions
  • 1 tbsp ginger, peeled and minced
  • juice from one lemon
  • a drizzle of sesame oil

Preparation

1. Add all dressing ingredients to a blender, and blend until creamy and smooth. You’ll have plenty of dressing for this recipe and additional salads.

2. Toss all the salad ingredients together in a bowl and drizzle with Ginger Miso Dressing. Give it one more good toss, then sit down and enjoy!
